Samosa | Do-Cha Mix

Ingredients for dough:

  1. Docha mix            - 1cup
  2. Ajwain                   - ¼ tbs
  3. Oil                         - 1tbs
  4. Water                    - needed

Ingredients for potato stuff:

  1. Boiled and mashed potatoes                   - 1cup
  2. Boiled green peas                                    - ½ cup
  3. Cumin                                                      -½ tbs
  4. Ginger garlic paste                                   - 1tbs
  5. Finely chopped green chilli                     - 1tbs
  6. finely chopped  coriander leaves            - 1tbs
  7. Chilli powder                                           - 1tbs
  8. Gharam masala                                       - 1/1tbs
  9. Amchur                                                   - ½ tbs
  10. Cumin powder                                        - ½ tbs
  11. Salt                                                          - needed
  12. Oil                                                            - 2tbs

Procedure:

Making dough:

  1. Take a mixing bowl add all the  dough ingredients and knead into tight dough
  2. Texture of the dough has to be foamy  and stiff but not non sticky
  3. Cover dough and rest 25min 

Instruction :

  1. Heat the 2tbs of oil in a pan add cumin seeds and ginger garlic paste respectively and sorte  for 20 seconds and then add chopped green chillies sort for another 109seconds
  2. Add spice powder like Finely chopped green chilli ,finely chopped  coriander leaves ,Chilli powder,Gharam masala ,Amchur ,Cumin powder,salt sorte for 30 -60sec
  3. Add boiled green peas and sorte for 10min also add mashed potato
  4. Sorte the potato masala for 2 to 3min until the potato blend well with spice powder
  5. Finally add chopped coriander leaves and keep aside for cool.

Shaping and making of the Samosas:

  1. Divide the dough into small lemon-sized balls and roll each into a smooth ball.
  2. Roll each ball into an oval shape, about 6-7 inches in length, and cut it in half to form two semi-circles.
  3. Take one semi-circle, apply a little water along the edges, and fold it into a cone shape. Press the edges to seal the cone.
  4. Fill the cone with the potato filling and pinch the open edges together to seal, ensuring there are no gaps. 
  5. Heat the oil for the deep fry in medium flame .gently slide samosa to the oil fry them on the low flame about 5-10min turn another side and fry until it turns crispy and golden
  6. Your do-cha mix amazing samosa is ready to serve

Pro tip:

Serve the samosa with green chutney and sweet tamarind.
