Ingredients for dough:
- Docha mix - 1cup
- Ajwain - ¼ tbs
- Oil - 1tbs
- Water - needed
Ingredients for potato stuff:
- Boiled and mashed potatoes - 1cup
- Boiled green peas - ½ cup
- Cumin -½ tbs
- Ginger garlic paste - 1tbs
- Finely chopped green chilli - 1tbs
- finely chopped coriander leaves - 1tbs
- Chilli powder - 1tbs
- Gharam masala - 1/1tbs
- Amchur - ½ tbs
- Cumin powder - ½ tbs
- Salt - needed
- Oil - 2tbs
Procedure:
Making dough:
- Take a mixing bowl add all the dough ingredients and knead into tight dough
- Texture of the dough has to be foamy and stiff but not non sticky
- Cover dough and rest 25min
Instruction :
- Heat the 2tbs of oil in a pan add cumin seeds and ginger garlic paste respectively and sorte for 20 seconds and then add chopped green chillies sort for another 109seconds
- Add spice powder like Finely chopped green chilli ,finely chopped coriander leaves ,Chilli powder,Gharam masala ,Amchur ,Cumin powder,salt sorte for 30 -60sec
- Add boiled green peas and sorte for 10min also add mashed potato
- Sorte the potato masala for 2 to 3min until the potato blend well with spice powder

Finally add chopped coriander leaves and keep aside for cool.
Shaping and making of the Samosas:
- Divide the dough into small lemon-sized balls and roll each into a smooth ball.
- Roll each ball into an oval shape, about 6-7 inches in length, and cut it in half to form two semi-circles.
- Take one semi-circle, apply a little water along the edges, and fold it into a cone shape. Press the edges to seal the cone.
- Fill the cone with the potato filling and pinch the open edges together to seal, ensuring there are no gaps.
- Heat the oil for the deep fry in medium flame .gently slide samosa to the oil fry them on the low flame about 5-10min turn another side and fry until it turns crispy and golden
- Your do-cha mix amazing samosa is ready to serve

Serve the samosa with green chutney and sweet tamarind.
